Prepare 12 oz. rice noodles per package instructions. Four cups cooked rice can be substituted.
At this point really see that anything goes for veggies!!!
2 T plum sauce (maple syrup can be substituted)
2 T garlic pepper sauce
1/4 cup Tamari
3/4 cup water
6 T PB2 (peanut butter powder or 2T fresh peanut butter
1/4 cup lite coconut milk
1 T corn starch
1 T Sriracha or to taste
Crushed reds to taste
1 green onion sliced at an angle
Heat wok on med high to high, sir fry veg until crisp yet heated thru, (use a splash or water if they begin to stick). Meanwhile mix sauce ingredients in a large enough bowl and whisk. Add sauce to the wok (or large nonstick pot/pan). Once thickened, add cooked noodles or cooked rice to heat thru. Garnish with green onion and crushed reds. Yum!
Note: if sauce gets too thick add another 1/2 to 1 cup water. If you like a lot of sauce double recipe. The noodles and rice will soak up some of the sauce. Cheers.
